9.30am – 4.30pm
6-8 per class
Everyone is welcome in any of the classes but you’ll find this class easier if you have some experience of baking yeasted breads. With only 7 or 8 bakers in each class there’s plenty of opportunity for discussion and personal hands-on tuition.
French Breads include:
Learning how to use a pre-fermented polish, shaping baskets (bannetons), slashing techniques, baking with steam and baking stones.
Batons + Pain d’Epi
Demonstration of Campaillou style loaf
9.30am Coffee and a chat about your baking experience and what you’d like out of the day
12 ish Second breakfast to keep you going
2.30pm Lunch in the dining room with a glass of wine and the first taste of your own bread
4.30pm Aim to finish. Times vary depending on experience, conversation and the weather!
What to bring: Just yourself, your questions and a smile. All equipment, aprons, ingredients, recipes, refreshments and lunch are included.
