7-8 bakers per class

If you’d like to learn how to bake sourdough you’ll find this class easier to follow if you’ve already attended one of the other classes. If you understand how yeasted breads work it will be easier to see how and why sourdough is different. But if you’re really determined – just go ahead and book because, with only 7 or 8 bakers per class, there’s plenty of opportunity for questions, discussion and one-to-one tuition.

You will bake

True sourdough loaf based on the Tartine recipe

“Semi-sourdough” ciabatta and focaccia using sourdough and normal yeast

And I’ll demonstrate a “Cheat’s Sourdough” loaf that uses the same method but uses normal yeast to give a similar (but less sour) effect.

Programme

9.30am Coffee and a chat about your baking experience and what you’d like out of the day

1.30pm Lunch in the sun room with a glass of wine and the first taste of your own bread

4.30pm Aim to finish. Times vary depending on experience, conversation and the weather
